Ah, Taco Night. It’s right up there with serving spaghetti or macaroni and cheese as a comfort dinner that never disappoints. And it gets bonus points for taking almost no time to make.
If you really want to make it feel like a party though, try mixing things up with a few new toppings. We spoke to the universe (okay, anyone on social media who’d respond to us) and polled our friends, and the not-to-be-missed additions are:
- Swap that tired, four-cheese Mexican blend for queso fresco, shredded gouda or pepperjack
- Finely chop kale and use it instead of iceberg lettuce for extra crunch (as well as a hearty boost of calcium and fiber)
- Pile on a hearty scoop of Dos Caminos-inspired, extra-flavorful guacamole
- Top with esquites, a Mexican street corn salad that adds a little tangy sweetness
- Add a poached or over-medium egg (because everything’s better when you crack an egg on it)
- Serve it on Meatless Monday: Instead of ground beef, make quinoa, then stir in a packet of taco seasoning. To make it extra healthy, swap out the tortilla for a lettuce wrap.
- Top pork tacos with quick-pickled onions: Whisk 1/2 cup apple cider vinegar, 1 tablespoon sugar and 1 1/2 teaspoons salt in a bowl, then submerge a sliced red onion. Let the onion soak for one hour, according to Bon Appetit, and drain excess juices before serving.
