ICYMI, Super Bowl 2022—aka Super Bowl 56, aka the third time in history a team (the Rams) has the home field advantage—is Sunday, Feb. 13. And if you’re looking for a quick appetizer to throw together, well, look no further. Buffalo chicken dip and deviled eggs are two game day staples, so why not combine the flavors into Buffalo deviled eggs? It sounded like a science experiment that could go horribly wrong. (Thankfully, it didn’t.)
The combination of egg yolk, mayo and Buffalo sauce makes the eggs a bit tangier than usual, almost as if there’s a hint of blue cheese in the mixture, though there isn’t. If you love that flavor, you can lean into it and top the eggs with a few crumbles. On that note, there are a few different riffs you could try:
- Sub half the mayo for half ranch (or drizzle with ranch dressing)
- Top with chives instead of scallions
- Garnish with finely chopped celery, crumbled blue cheese or crumbled feta
- Sprinkle with a light dusting of chili powder
Buffalo Deviled Eggs
Equipment
- 1 sauce pan
Ingredients
- 12 large eggs
- 1/4 cup mayonnaise
- 2 tbsp Buffalo sauce
- 1/8 tsp salt
- 1 tbsp finely chopped scallions
Instructions
- Place eggs in a large saucepan. Cover the eggs entirely with water and bring to a boil. Once boiling, reduce to a simmer and cook 6 to 7 minutes. Turn off heat and use tongs to place eggs in a bowl of cold water. Let cool.
- Peel eggs, discarding shells. Halve eggs, removing egg yolks. Set egg whites aside.
- In a medium bowl, mash egg yolks and combine with mayo, Buffalo sauce and salt. Spoon mixture into the hull in each egg white. Top with chopped scallions and serve.
