After a coworker roasted strawberries at Delish, I began to wonder: What other foods taste incredible roasted? Roasting peaches isn’t exactly groundbreaking, but I’d never tried it before, and boy, was I missing out.
It’s not the kind of recipe you want to make if your A/C is broken — roasting is a surefire way to heat up your kitchen fast — but otherwise, it’s absolutely worth it, especially when topped with whipped cream (or ice cream!) and a dash of cinnamon.
It’s the most virtuous mid-week dessert that can make a regular Wednesday night feel special.
Ingredients
- 2 peaches
- 2 tablespoons butter (about 1/2 tbsp per peach half)
- Honey (just enough to drizzle on each peach)
- Ground cinnamon
- Whipped cream or ice cream
Instructions
- Preheat the oven to 375 degrees F. As it heats, halve the peaches and remove the pits.
- Place the peaches cut-side up in a baking dish, and cover the tops with chopped pieces of butter. Drizzle honey on each, then lightly sprinkle cinnamon.
- Roast for 35-40 minutes, or until the tops have browned. Remove from the oven and let cool for 5-10 minutes before topping with whipped cream or ice cream.
